Pumpkins and squash originate in the Americas and can be found in a wide variety of Latin American and Caribbean cuisines. For this recipe any winter squash, such as acorn squash or butternut squash, can be substituted.
This cooked pumpkin can be saved in the freezer for a couple of months so you can enjoy pumpkin even when it is out of season.
