1 cup cooking oil (canola or sunflower)1/2 cup cocoa powder2 cups cake flour1 1/2 cups white sugar4 teaspoons baking powder1 cup boiling watera pinch of salt
Substitute 1 cup of the flour for 1 cup wholemeal cake flour for a nutty taste and more texture.Sprinkle coconut on the cake plate before assembling the cake. This prevents the cake from getting stuck to the plate.
This chocolate cake is good enough to serve in a coffee shop or tea garden. If kept in an airtight container, it remains moist for up to three days. It can be served as a round double layer cake or a single layer cake. It can also be baked in a square pan and cut into patterns for children's theme cakes.
Combine icing sugar, butter and cocoa powder with an electric mixerAdd milk little by little until the icing is the right consistency for spreadingTurn on half of the cake upside down on a cake platter, spread with icing and place the other half right side up onto the other half. Spread liberally with icing sugar on top and on the sides.
Preheat oven to 350 degree F.Line two round baking pans approximately 8 inches in diameter with non-stick baking paper. Spray the sides of the pans with non-stick baking spray.Separate the eggs into two large mixing bowls.With an electric mixer, beat the egg whites until soft peaks form. Then beat the yolks until thoroughly combined.Combine boiling water and cocoa powder in a separate bowl. Stir until the cocoa powder has dissolved.Add the oil and the water and cocoa powder to the egg yolks and mix thoroughly.Add flour, sugar, salt and baking powder to the egg yolk mixture and mix well.Add egg whites to flour mixture and fold in gently until combined.Bake in a preheated oven for 30 minutes.Test both cakes with a cake test pen before taking from the oven.
